Quick Beef Short Ribs
You know sometimes, when I’m running around getting stuff done, I don’t have time to make extravagant dishes.
This is usually what my dinner will look like. Something light but nutrient dense and hydrating after a long hot day. The beef short ribs from @butterboxfarm are my new favourite obsession. I left them slow cooking for the afternoon so they were ready to go by dinner and marinated them in an Asian spice blend from @southdownsseasoning, then it’s literally a one pot wonder.
Quick Beef Short Ribs

Time: ~2 hours 30 minutes
Ingredients
* 4 beef short ribs
* 1L Asthi beef or venison bone broth
* Asian all-purpose seasoning
* 1 spring onions, finely sliced
* Chilli, finely sliced (to taste)
* Beef tallow or olive oil, for searing
Method
Generously coat the short ribs with the Asian all-purpose seasoning. Heat a little tallow or olive oil in a large ovenproof pot and sear the ribs on all sides until deeply caramelised. Pour in the Asthi bone broth, making sure the ribs are mostly submerged. Bring to a gentle simmer, cover and cook on low for 2–2½ hours, or until the meat is tender and falling away from the bone.
Remove the ribs and spoon over some of the rich cooking broth. Finish with spring onions and fresh chilli.
Tip: Sip on any remaining broth for the rest of the week. You can add any veg or carbs you fancy to bulk it out - rice, potatoes, noodles and pak Choi, green beans etc.
