Wild venison meatball broth

Make this wild venison meatball broth. Super quick, easy and versatile. Have it for breakfast, lunch or dinner.

Venison is so abundant, it’s lean and possibly one of the most sustainable meats on the planet. This venison was shot locally by @halfwaytoahomestead.

To make:
500g wild venison mince
250ml beef bone broth @weareasthi
Thumb of ginger
1 carrot
1/4 lime juice
1 tblsp fish sauce
1 tblsp ACV
1/2 red onion
1 tblsp soy sauce
Handful of frozen peas
Handful of parsley and coriander
1 spring onion
Micro greens to garnish

1. Make the meatballs: add mince, 1/4 finely diced red onion, fish sauce, soy sauce & ACV. Mix, form into balls and roast for 15-20mins.
2. Make the broth: sweat off 1/4 red onion in beef tallow, add ginger, chilli. Then add chopped carrot, peas, parsley, coriander and lime juice. Add bone broth and season to taste.

Once the meatballs are done add broth into bowl, meatballs on top and garnish with spring onions and micro greens.

This meal is a perfect light option if, like me, you’re still reeling from Christmas but still want something wholesome, packed with protein and warming.
