Simple broth with chicken and vegetables

This is my go to dinner when I am in a rush, have veg to use in the fridge or just want something really warming and hearty.

Serves one person.

 

Ingredients:

250ml Asthi Beef Bone Broth

200g of chicken breast or thigh (thigh will be cheaper and the darker meat is more nutrient dense)

Handful of veggies of your choice.  I like to throw in whatever needs using from the fridge like broccoli, potatoes, spring onions, ginger, chilli.  You get the jist.

Seasoning to taste of salt and pepper.

 

Method:

1. If you are using chicken breast, chop it into small wedges.  If you are using chicken thigh, then you can leave it whole, just watch the bone whilst eating.  Place into a saucepan.  Add Asthi Beef Bone Broth and chopped veggies and your seasoning to taste.

2. Simmer gently for 20 minutes (do not boil) or until the chicken and vegetables are cooked through.

3. Serve in a bowl.  Sprinkle some chilli on top and perhaps a touch more salt, then you're good to go.
